Several farms contributed cherries to this lot that was harvested in December of 2025; from the Al Haymah region in Yemen and made up entirely of the rare Al Udini varietal. Once delivered to the mill, the cherries were fermented in an Anaerobic environment and then carefully dried on raised beds.
We are lucky to offer yet another amazing coffee from Yemen at a time when good quality coffees from that country are hard to find. This one is a true gem: Cleaner than most coffee from Yemen, here we have a layered cup that is filled with jammy fruit, cherries, strawberries, some papaya and preserved lemon with a dense body.
Given this is a limited offering, we have set roast dates for this coffee. I you order other coffee, in addition to this one, your entire order will be roasted and shipped on the specified roast date.
Please note: this coffee requires at least of week of rest after roasting for the optimal tasting experience.
