While this farm has existed for years just outside of the Boquette, Jose Chevas took control of the farm from his father a several years ago and implemented several quality-control protocols. Prior to Jose’s control, the farm was more focused on the local market but Jose has raised the bar, making Chevas a top 10 finisher in the Best of Panama competition in 2025.

Once harvested from a shady section of the farm in Salto at 1650 meters, the cherries were placed in a sealed fermentation tank and inoculated with Saccharomyces cerevisiae, allowing for a controlled anaerobic fermentation over approximately six days. Following fermentation, the cherries were transferred to a temperature controlled darkroom for at least 15 days. This slow-drying step gently halts fermentation while preserving the coffee’s aromatic complexity.

Tasting notes: Strawberries are front and center. The coffee opens to reveal, papaya, guava, and vanilla with expressive sweetness.
