Mario Aribba 3 BANC lot - Anaerobic Natural

The Peterson family has had an incredible 2025. They not only set records in the Best of Panama for winning all three categories at the competition: Natural, Washed, and Varietals ( a first-time sweep by one farm) but also for the amount of money they generated at the BOP Auction for those coffees: $30,000 per kilo for their 98 point washed coffee and $23,000 per kilo for their natural.

While we are offering coffee from the same region of the farm and process as we did in 2024, this year’s offering is sweeter, more complex, and far more dynamic than last year’s.

As with 2024, this lot is technically a natural/dry processed coffee but because the coffee was allowed to ferment for 120 hours in an anaerobic environment and then dried in a cold room for 38 days without without being exposed to harsh sunlight the structural integrity of the bean was preserved, leading to a much cleaner, more interesting cup than is typical for a natural coffee.

Coffee Review’s Blind Assessment: Aromatically intense and fruit-forward. Passionfruit, lychee, pink grapefruit zest, cocoa nib and orchid-like florals in aroma and cup. Acidity is crystalline and vibrant, body plush and silky. The finish is long, offering tropical-fruit sweetness, floral perfume and a hint of dark chocolate.
