Nogales is located in Pitalito, Huila, Colombia and nestled in an ideal growing environment with elevations up to 2000 meters. Winner of the 2005 Colombian Cup of Excellence, the Hernandez family, led by Oscar Hernandez, continues to innovate and experiment with varietals and processing techniques.
This lot is comprised of the Java varietal and harvested at 1800 meters. After harvest, the coffee cherries are briefly submerged in 180 degree water which helps to release extra sugars that fuel the fermentation. After de-pulping, the beans are fermented for five days with the addition of a small amount of pre-fermented yeast that was preserved from a previous fermentation of the Java varietal. This advanced fermentation method boosts fermentation quality while preserving the coffee’s unique characteristics.
A spectacular cup, this coffee boasts a wide range of complexity: lychee, peach, orange zest, plum, papaya and dates.
