From Coffee Review 2/9/26:
A beautifully composed experimental washed Java that balances expressive aromatics with structure and poise — complex without excess and deeply satisfying throughout the profile.
Nogales is located in Pitalito, Huila, Colombia and nestled in an ideal growing environment with elevations up to 2000 meters. Winner of the 2005 Colombian Cup of Excellence, the Hernandez family, led by Oscar Hernandez, continues to innovate and experiment with varietals and processing techniques.
This lot is comprised of the Java varietal and harvested at 1800 meters. After harvest, the coffee cherries are briefly submerged in 180 degree water which helps to release extra sugars that fuel the fermentation. After de-pulping, the beans are fermented for five days with the addition of a small amount of pre-fermented yeast that was preserved from a previous fermentation of the Java varietal. This advanced fermentation method boosts fermentation quality while preserving the coffee’s unique characteristics.
Blind assessment from Coffee Review: Complex, richly aromatic, lyrically expressive. Notes of apricot, bergamot, jasmine, baking chocolate and Meyer lemon zest in aroma and cup. Juicy, well-integrated acidity; plush, rounded body. The finish is long and resonant, carrying sweet citrus, rich florals, and resonant cocoa depth.
DUE TO LIMITED STOCK, WE HAVE SET UP ROAST DATES FOR THIS COFFEE. IF YOU ORDER OTHER COFFEES IN ADDITION TO THIS ONE, YOUR ENTIRE ORDER WILL BE ROASTED AND SHIPPED ON THE ROAST DATE.
