El Mirador is located in Pitalito, Huila and operated by siblings Yessica and Diego Parra. Their great-grandfather began cultivating coffee and their grandparents and parents continued the tradition. As a fourth generation coffee-producer, Yessica took El Mirador to new heights while she pursued unique approaches to fermentation and varietal profiling.

Here, we have a Geisha that is technically a natural/dry-processed coffee. But unlike a traditional natural coffee the cherries are first fermented in open tanks for 60 hours before being dried on beds for up to three weeks. The result is a cleaner cup with many washed-coffee characteristics.

While we do not have the rich tropical fruit we can find in natural Geishas, this one veers to red cherries, orange, honey, semi-sweet chocolate. A truly enjoyable cup of coffee.
