Finca Villa Pastora is located in Palestina, Huila and has an altitude of 1750 masl. Gerson Mora Ortega and his family have owned this farm that was passed down by his grandmother for 25 years.
This lot is made up entirely of the Yellow Pacamara varietal that has undergone advanced fermentation prior to drying. The coffee had an initial oxidation of 60 hours. After this oxidation, they added fermented Pacamara mosto ( fermentation juice from cherry ) and a second submerged anaerobic fermentation begins, lasting 92 hours. The coffee is then sun-dried for 16 days.
