We have been super lucky this year to offer multiple coffees from Yessica and Diego Para. This is our third offering from Yessica and Diego Parra at El Mirador. Their great-grandfather began cultivating coffee and their grandparents and parents continued the tradition. As a fourth generation coffee-producer, Yessica took El Mirador to new heights while she pursued unique approaches to fermentation and varietal profiling.
The Aji varietal is a rare and relatively recent discovery in Colombia. Unlike many varietal mutations in Colombia, the Aji is 100% Ethiopian Landrace, such as the Gesha and Sidra.
TEST Roast: Transparent, citrus, medium bodied, light tropical fruit.
