Sweet Red Apples.
This is the fourth coffee we have offered from Yessica and Diego Parra at Finca El Mirador in Huila.
Their great-grandfather began cultivating coffee and their grandparents and parents continued the tradition. As a fourth generation coffee-producer, Yessica took El Mirador to new heights while she pursued unique approaches to fermentation and varietal profiling.
The running theme between each coffee we have offered from them: immaculate processing and harvesting. All of their coffees have been exceptionally clean and sweet and this Pink Bourbon is no exception.
While this is a honeyed coffee, not much mucilage remained on the coffee during drying so this is is not as berry-fruit forward as some honeyed coffees. This is a sweet, clean cup filled with red grape, red apple and orange.
